You heat it once, and the cooking continues without you having to tend a live flame the whole time, which burns noticeably less wood than keeping an open fire going for hours.

Earth oven in the wild: the most accessible method

The method comes down to three simple steps. Dig a pit in soil that can hold its shape, not too sandy and not waterlogged. Light a fire big enough to produce a solid bed of coals and heat the surrounding earth for a good while, often an hour or more depending on the size you’re aiming for. Once the pit is properly hot, pull some of the coals out or push them to the side, place the food in (ideally wrapped in leaves or foil if you have it), then seal it back over with earth to trap the heat and let it cook slowly.

The gear list fits in one sentence: a shovel or a sturdy stick to dig, wood to produce the coals, and optionally a few stones at the bottom of the pit to hold even more heat. More durable for a fixed camp: the stone oven

For a base camp held down for several days, rebuilding a pit for every single meal doesn’t make much sense. Stacking stones around and over the fire creates a mass that builds up heat over time, and that mass keeps releasing heat for hours after the main fire has gone out, allowing slow cooking with no need to babysit it.

One precaution matters more than any other on this build: never use stones pulled from in or near a water source. A porous stone that’s trapped moisture inside can explode under heat, as the water inside flashes into steam without warning. Slow cooking is where this kind of oven earns its keep. Meat and vegetables wrapped in leaves cook gently over several hours with no need to check on them constantly, working almost like an improvised slow cooker. Root vegetables buried directly in the hot earth, or fish wrapped in fresh leaves, are two straightforward examples suited to this exact method.

A basic bread, simple dough set on a heated stone or buried briefly under covered coals, can also cook this way. It’s nothing like a proper bread oven, but the steady, ambient heat does the job over time in a way a direct flame never manages as cleanly.

How to put it out and close it properly

An earth or stone oven holds live coals well after the surface looks cold, the earth insulates too well to trust appearances alone. Checking that everything is fully cold before leaving isn’t optional, a buried coal can smolder for hours under a layer of earth that already looks cooled off.

Once you’ve confirmed it’s fully out, filling the pit back in and scattering the stones if the site sees regular foot traffic is part of the same job as putting the fire out.
